So many Greens at VBGC!

The rooftop garden at VBGC has been doing so well, that we have been having an abundance of greens! The week before and this week on February 8th, I got to harvest some of the abundance to give to the parents when they came by to the club. When the VBGC members arrived we started with the making of a salad and dressing. I brought along with me something new the kids have not tried, DAIKON, to eat along with the salad! After enjoying the salad, they opened their journals to write observations from the garden. When everybody was done writing all observations, we sat down and I asked a couple of questions, like, “What type of things are growing in the garden, that are usually not here during this time?” We have a tomato plant, and a squash from the summer still growing because of this warm winter.

With the second group, the students learned about warm and cool season veggies. I pointed out about the tomato and squash, they are summer veggies, but are growing  right now because of the warm weather.

It all started when Cindy took an environmental science class at PCC that sparked her interest in Sustainability. She transferred to CSUN, and pursued a degree in Geography with a minor in Sustainability. During her senior year she was the student manager of the compost facility and food garden on campus. Wanting to continue being involved with a garden and compost, she found Enrich LA. She believes that if we want people to care about the environment, we need to teach them young, and gardening is an avenue to teach kids how important it is to take care of this earth and be good stewards! When she's not gardening, she's out camping and enjoying nature!
