Sprouts and Surprises at Hollenbeck

The garden at Hollenbeck has been busy this week! Several seeds have sprouted and we now have new beets, radishes, carrots, spinach, and lettuce.  Additionally, our compost has almost finished the transition to rich, healthy soil. We were excited to see our planting and weeding pay off, and now we will be ready to replenish our soil with fresh compost next week.  We followed up last week’s lesson with a discussion of plant and human needs and learned how each plant’s vitamins help meet our body’s needs.
