Delish Summer Eggplants from ALC

The first day of class yielded quite a few eggplants, squashes, and chilies!

 

Last semester we made seed bombs and the leftovers accidentally made it into the soil… a few months later we have amazing summer squash!

 

We decided to try something new and eat it raw with chimichurri, Brazilian style. Yum!
